Departmentalization is basically organizing people into departments - deciding on the best way to group together individuals who perform certain roles. In a restaurant front and back of house are the most essential groupings, but within that you could have table service, reception/greeting etc, and back of house could have food prep, or other jobs like kitchen porter.
